Vegan Winter Sugar Cookies



If it's cold outside, these vegan winter sugar cookies are just what you need. They're soft, sweet, and holiday-themed, so both vegans and non-vegans will love them.

Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup vegan butter, softened
  • 1 cup granulated sugar
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup powdered sugar for dusting
  • Vegan food coloring optional
  • Vegan sprinkles optional

Instructions:

Preheat oven to 350F 175C

In a large bowl, cream together vegan butter and granulated sugar until light and fluffy

Add applesauce and vanilla extract, mix until well combined

In a separate bowl, whisk together flour, baking powder, and salt

Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms

Roll out the dough on a lightly floured surface to about 1/4 inch thickness

Use cookie cutters to cut out shapes and transfer them to a baking sheet lined with parchment paper

Bake for 8-10 minutes, or until edges are lightly golden

Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely

Once cooled, dust with powdered sugar and decorate with vegan food coloring and sprinkles if desired
