Slow Cooker Vegetable Lamb Stew



This Slow Cooker Vegetable Lamb Stew is a hearty and comforting dish that's perfect for chilly days. The lamb becomes wonderfully tender as it cooks slowly with the vegetables and savory broth, creating a delicious and satisfying meal for the whole family.

Ingredients:

  • 1 lb lamb stew meat, cubed
  • 3 potatoes, diced
  • 2 carrots, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen peas
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions:

Place lamb, potatoes, carrots, onion, garlic, and peas into the slow cooker

In a separate bowl, mix together beef broth, tomato paste, thyme, rosemary, salt, and pepper

Pour the broth mixture over the lamb and vegetables in the slow cooker

Cover and cook on low for 6-8 hours or high for 3-4 hours, until lamb is tender
