Vegan Lentil Salad
This vegan lentil salad is full of healthy, organic foods, like organic vegetables and lentils that are high in nutrients. This dish is easy to make and tastes great thanks to the fresh, healthy ingredients. It's great for a light lunch or as a side dish with any other food.
Ingredients:
- 1 cup organic lentils
- 2 cups mixed organic vegetables such as carrots, bell peppers, and cucumber
- 1/4 cup organic red onion, finely chopped
- 1/4 cup organic parsley, chopped
- 2 tablespoons organic olive oil
- 2 tablespoons organic lemon juice
- Salt and pepper to taste
Instructions:
After rinsing the lentils under cold water, cook them as directed on the package until they are soft
Cut up the mixed vegetables, red onion, and parsley while the lentils are cooking
After cooking the lentils, drain off any extra water and let them cool down a bit
Put the cooked lentils, mixed vegetables, red onion, and parsley in a large bowl
Add lemon juice and olive oil, and then salt and pepper to taste
Add everything to the bowl and mix it well
Allow the lentil salad to cool down or serve it warm
