Quinoa and Vegetable Medley
A healthy and protein-rich dump dinner with quinoa, black beans, and many different kinds of colorful vegetables. This Instant Pot recipe is quick and easy, and it's great for making a healthy meal during the week.
Ingredients:
- 1 cup quinoa, rinsed
- 2 cups mixed vegetables carrots, broccoli, bell peppers
- 1 can 15 oz black beans, drained and rinsed
- 1 cup vegetable broth
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 1 tbsp olive oil
- Fresh cilantro for garnish
Instructions:
Press the 'Saute' function on the Instant Pot and heat olive oil
Add mixed vegetables and saut for 2-3 minutes
Add quinoa and continue to saut for another 2 minutes
Stir in black beans, vegetable broth, cumin, garlic powder, onion powder, salt, and pepper
Secure the Instant Pot lid, close the pressure valve, and set to 'Manual' for 5 minutes
Once done, allow for a natural pressure release for 5 minutes, then quick release
Fluff the quinoa and vegetables with a fork, garnish with fresh cilantro, and serve
